Olivo Restaurants began in 1997 when Mr Simon Gurney, the Chairman of Olivo Restaurants, employed Mr. Fulvio Bertani, the current Managing Director and Mrs. Nicola Jayne Bertani in order to set up the first Olivo in Guildford.
